Shaved Asparagus Salad from Myka Estates

Shaved Asparagus Salad with Lemon Vinaigrette

Start to finish: 30 Minutes , 8 servings

DRESSING INGREDIENTS

2 cloves garlic, chopped

1 lemon, juiced

¼ cup apple cider vinegar

1 tsp honey

1/4 cup fresh parsley, chopped

1/8 tsp red pepper flakes

1 tsp honey-Dijon or regular Dijon mustard

1/2 cup olive oil

Kosher salt

Fresh ground pepper


SALAD INGREDIENTS

1 lb asparagus, trimmed

1 cup parmesan, shaved 

½ red pepper, diced fine

½ red onion, thinly sliced

Zest from ½ of lemon

Fresh cracked pepper and toasted pine nuts for garnish

DRESSING INSTRUCTIONS

Put all ingredients, except olive oil and salt and pepper, into a blender or food processor. Blend until smooth. Slowly add olive oil through the top while the blender/processor is running. Blend until creamy and smooth. Season with salt and pepper to taste.

SALAD INSTRUCTIONS

Use a vegetable peeler to shave the asparagus: Lay an asparagus spear flat on a cutting board. Starting at the bottom end, use the peeler to shave it into long thin strips or ribbons. You can cut off the top of each asparagus first if desired. Place the asparagus shavings and tops in a large bowl and repeat with remaining asparagus. 

Add the rest of the ingredients of the salad to the bowl and toss with the dressing. Garnish with pine nuts and fresh ground pepper.
