Ojai Roots Farm Shop and Wine Garden Recipe Feature

Grilled Beef Sausage with Sweet Peppers, Onions & Charred Greens from Ojai Roots

“Savory, a little smoky, and adaptable to what’s in season, we’ve created this dish to pair with the full-bodied structure of the Dragonette Cellars MJM Syrah Santa Ynez Valley CA 2021.” Chef Rob, Ojai Roots Farm Shop and Wine Garden

Ingredients

  • 1½ lbs beef sausage (links or coils)

  • 3 bell peppers (any color), sliced into thick strips

  • 1 large yellow onion, sliced

  • 1 bunch hearty greens (kale, chard, or broccoli rabe), stems trimmed

  • 3 tbsp extra virgin olive oil, divided

  • 1 tsp salt, plus more to taste

  • ½ tsp freshly ground black pepper

  • ½ tsp crushed red pepper flakes (optional)

  • 1 tbsp red wine vinegar or balsamic vinegar

  • Fresh herbs for finishing (parsley, oregano, or thyme)

Instructions

  1. Preheat the grill/grill pan to medium-high heat

  2. Toss peppers and onions with 1½ tbsp olive oil, salt, and pepper. Toss greens separately with remaining olive oil and a pinch of salt

  3. Grill sausages first, turning occasionally, until deeply browned and cooked through (about 10–12 minutes). Transfer to a plate to rest

  4. Grill peppers and onions until softened and lightly charred, about 6–8 minutes. Grill greens just until wilted and charred at the edges, 2–3 minutes

  5. Slice sausages into large pieces. Toss peppers, onions, and greens together, drizzle with vinegar, and adjust seasoning

  6. Top with sausage and finish with fresh herbs

Spoon everything onto a large platter, drizzle with good extra-virgin olive oil, and serve with crusty bread or rice to soak up the juices.
